New study on RFID’s impact on Fresh Food Management

Inspired by global retail trends, the RFID Lab at the University of Parma has conducted a comprehensive study on the role of item-level RFID technology within the Italian large-scale food industry.

Walmart has recently expanded its use of RFID technology to optimize overall inventory accuracy and manage the expiration dates of highly perishable goods, such as meat and fish. In light of these developments, the RFID Lab set out to measure the actual impact similar technological implementations could have on the management of fresh food in major retail stores in Italy.

The Challenge of Fresh Food Management

The fresh meat and fish departments represent some of the most critical and challenging areas for major retail chains. They are highly demanding environments characterized by limited shelf life, rapid inventory turnover, tight profit margins, and processes that remain largely manual.

RFID benefits 

When applied at item level, RFID guarantees unique identification and accurate real-time traceability of the single product. It allows for massive, bulk data reading via radio frequency without the need for direct line-of-sight scanning. This enables:

  • Real-Time Stock Visibility: Pinpoint tracking for every single item present at the point of sale, including its best before date.
  • Automated Inventory Counts: Seamless and rapid stock checks and item finder using handheld RFID readers.
  • Smart Restocking: Automatic out-of-stock alerts and immediate restocking triggers.
  • End-to-End Traceability: Complete supply chain visibility, from the packaging facility to the refrigerated display area.

A Comprehensive Evaluation Model

To accurately assess the potential benefits, the RFID Lab developed a tailored model that evaluates three key quantitative metrics:

  • Operational Efficiency: RFID significantly reduces the time staff spend on manual inventory checks, freeing department managers to focus on value-added activities and customer service.
  • Waste Reduction: By accurately tracking expiration dates, the model demonstrated a drastic reduction in costs associated with wasted or expired products.
  • Inventory Accuracy & Sales: RFID enables near-perfect inventory accuracy, minimizing out-of-stock scenarios on the shelves and directly driving an increase in sales.

Beyond these measurable efficiencies, the study highlighted Food Safety as a crucial qualitative benefit. Item-level tracking offers consumers the ultimate guarantee that they will never encounter an expired product, or one close to its expiration date, in the refrigerated aisles.

Proven ROI and Next Steps

The theoretical model and study findings were verified and validated through real-world data from two well-known Italian retail chains. The results point to a highly promising return on investment (ROI) for integrating RFID technology to manage fresh food.

The next step is to transition the findings from data models to the physical aisles by launching a live pilot project directly in the field.
